Half Day Fire School – The Perfect Steak

Our shorter, half day fire school course is a more specific version of our very successful full day courses. These sessions are aimed at those who want to learn more specific skills and techniques, or to those who just want to dip their toes into the joy that is outdoor cooking.

This is a class for connoisseurs of great beef. We have found a supplier who we firmly believe produces the best beef in the world. In this class we cover various cuts and cooking techniques – from ‘dirty’ cooking the various flank steaks, to reverse searing ribs or rumps, not forgetting the sides of course!

Our informal suppers, but with the same structure, attention to detail and quality as our Signature feasts. You will be served two or three courses in the theme of whatever Luke has chosen and enjoy eating, drinking and laughing around our beautiful oak dining table. We might even be able to invite some guest chefs to join us!

Feast night

Where it all started! This is a high-end five course tasting menu featuring amazing local meat, fish and vegetables from the local East Devon Larder. Once a month, these are communal suppers where you will make new friends, eat delicious food and then take in the magical atmosphere of the High Grange Estate. It begins with a welcome cocktail and canapés, and guests then sit down at our outdoor communal oak table (indoor in terrible weather!) for at least five courses of the best local ingredients.

Come prepared to learn, eat and laugh. This is our signature bespoke barbecue cooking school which covers the full gambit of outdoor cooking. We’ll cover a huge variety of outdoor fire cooking, British barbecue techniques and butchery with Luke or one of our guest tutors.
