Wye valley Asparagus, Quails egg, lardo carpaccio, Nyetimber sabayon, split pork & walnut sauce.

‘Chicken & Mushroom’

Free range chicken ballotine, stuffed with morel mushroom, confit chicken leg, watercress, morel espuma, chicken jus gras.

‘Stew & Dumplings’

Slow cooked Budleigh lobster, lobster dumpling, shellfish Boulanger potato, braised baby gem lettuce, lobster bisque.

‘Rhubarb & Custard’

Rhubarb mousse, all buttered shortbread biscuit, rhubarb gel and jelly, torched meringue, rhubarb sorbet, white chocolate custard.
