It is Chef Ian Webber's philosophy made tangible - each dish sources from producers he knows and trusts, chosen at their peak and prepared with refined technique that honours rather than masks their natural character.
This is ingredient-led cooking at its heart. The cured trout arrives with sorrel and horseradish buttermilk. The celeriac holds centre stage with elderberry and hazelnut. The seasonal fish is dressed in lobster sauce with preserved fennel. Vegetables - cauliflower with Old Winchester and thyme, warm potato salad alongside your main - are chosen for their moment, their essence. There is no striving here, no show. There is only confidence in simplicity and deep respect for what the seasons provide.
