Eat more veg! Roasted Seasonal Vegetables with Bell & Loxton Oils

Here’s a super simple and healthy way to eat more veg and eat the rainbow with Bell and Loxton. Perfect for #veganuary!

Roasted Seasonal Vegetables

A selection of seasonal vegetables – try carrots, swede, potatoes, sweet potatoes, butternut squash, onions… the more colourful the selection the better!

Approx 6/7 tbsp Bell and Loxton cold pressed rapeseed oil or if you prefer you can also add a couple of tbsp of Bell and Loxton Garlic Oil

  • Preheat oven temperature to 200C/400F/Gas 6.
  • Chop vegetables into cubes.
  • Place all vegetables into baking dish and season.
  • Drizzle Bell and Loxton cold pressed rapeseed oil over the vegetables.
  • Season as required.
  • Roast 20-30 minutes until golden and roasted.

A simple and delicious way to enjoy vegetables all year round. All our oils are suitable for vegan and vegetarian diets.
