What is bean-to-bar chocolate?

Bean-to-bar chocolate is made by the chocolatier from whole cacao beans, giving them control over every stage of the process. The beans are roasted, cracked and winnowed, then ground, refined and conched before the chocolate is tempered and moulded into bars. This hands-on process allows makers to bring out the unique flavours and character of different cacao beans.

What makes artisan chocolate different from mass-produced chocolate?

Artisan chocolate is typically made in smaller batches using carefully selected ingredients and more hands-on techniques. Makers can take time to develop flavour and texture, experiment with cacao origins and ingredients, and pay close attention to every stage of production. The result is chocolate with greater individuality, craftsmanship and flavour complexity.

How is traditional artisan fudge made?

Fudge is made by gently heating sugar, butter and milk or cream together until the mixture reaches a high temperature that creates the characteristic soft, creamy texture. Handmade fudge is often cooked in a heavy copper pan or copper-bottomed pan, which distributes heat evenly and gives the maker good control over the cooking temperature.

Once the sugar, butter and cream or milk mixture reaches the right temperature, it is cooled and then beaten or worked by hand to encourage the fine sugar crystals that give traditional fudge its characteristic creamy, slightly crumbly texture. Flavours such as vanilla, chocolate, nuts or sea salt can then be added to create different varieties.
