Sweet Chilli Vegetables

 400 g mixed green vegetables, tenderstem broccoli, sugar snaps, asparagus
 1 red chilli
 1 tsp fresh ginger
 1 garlic clove
 2 tbsp fresh coriander
 25 ml water
 85 ml white wine vinegar
 175 g caster sugar
 12 g fish sauceleave out to make the dish vegan
 1 tsp cornflour
 1 lime
 2 tbsp toasted sesame oil
 mixed sesame seeds

Finely slice the chilli (remove the seeds if you like a milder heat), ginger and garlic.

Put the water, white wine vinegar, caster sugar and fish sauce in a saucepan and bring to the boil.

Whisk in the cornflour making sure there’s no lumps.

Add the sliced chilli, ginger and garlic to the mix and allow to cool.

Finely chop the coriander and add to the cooled sauce.

Heat a wok or large frying pan on a high heat. Add the sesame oil and vegetables. Stirring continuously until vegetables start to soften.

Coat the vegetables in the sweet chilli sauce and place in a large serving bowl, sprinkle with sesame seeds and squeeze over the juice of the lime. Serve straight away.
