Boozy Cranberry & Port Relish

This recipe was written by The Arundell's Executive Chef, Ashley Wright

600 g Fresh cranberries
100 g Sugar
50 ml White wine vinegar
1 Large shallotfinely diced
100 ml Port
1 tsp Ground black pepper
1 tsp Ground cinnamon
1 OrangeJuice and zest

Sweat your shallot with a splash of oil. Before it colours, add the spices followed by the cranberries, sugar, vinegar and orange.

Simmer slower for 20 minutes and then add the port.

Leave to cool.
