Boozy Cranberry & Port Relish

Ingredients
  

  • 600 g Fresh cranberries
  • 100 g Sugar
  • 50 ml White wine vinegar
  • 1 Large shallot
  • 100 ml Port
  • 1 tsp Ground black pepper
  • 1 tsp Ground cinnamon
  • 1 Orange

Instructions
 

  • Sweat your shallot with a splash of oil. Before it colours, add the spices followed by the cranberries, sugar, vinegar and orange.
  • Simmer slower for 20 minutes and then add the port.
  • Leave to cool.
